WE HEART RAINBOW COOKIES
Just like her cookies, Zola Bakes' Founder, Samantha Zola, is small but packs a big punch! After attending The French Pastry School of Chicago, Samantha honed her skills while working for well known bakeries such as Épicerie Boulud and Magnolia Bakery in NYC, before leaving to pursue her dream of having her own company dedicated to her favorite treat, the Rainbow Cookie. The Rainbow Cookie is typically a bite-sized, tricolor, almond-based sponge cake, layered with luscious jam and topped in rich chocolate icing, originating in Italian-American bakeries in the early 1900s. The three colors (usually red, white, and green) are said to be an homage to the Italian flag. Growing up in Long Island, Samantha was just a train ride away from the famed bakeries of Little Italy NYC, and she made it her mission to give those little tastes of heaven a millennial make-over. As she says, “Why taste the rainbow if it’s not literally dripping in chocolate and sparkle?”
